how difficult is it to get hired as an assistant to the designer without having studied design? i live in a medium-sized metro area that is expanding.

A lot depends on the design firm. Often, apprentices or interns are hired while they are going to school to build their portfolio. But, generally to work on-site or with clients, you need a degree. That doesn’t mean you won’t be hired to do office work or assist with running the business and maybe have some hands on work for a specific project.
Without the proper credentials you may get hired but paid little.
You may however start and get the experience and then get an education. Some Schools over Internet studies and certificates.
